Delicious Mango Cake Recipe


Ingredients:


For the Cake:


  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mango puree (from ripe mangoes)
  • ½ cup buttermilk (or milk with 1 tsp lemon juice)


For the Mango Frosting:


  • 1 cup heavy cream (chilled)
  • ½ cup mango puree
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract


For Garnish:


  • Fresh mango slices
  • Mint leaves (optional)



Instructions:


  1. Prepare the Mango Puree:

  • Peel and chop 2-3 ripe mangoes.
  • Blend them into a smooth puree. Set aside.

  1. Make the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

    • In a bowl, whisk together flour, baking powder, baking soda, and salt.

    • In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.

    • Fold in the mango puree.

    • Gradually add the dry ingredients and buttermilk, alternating between the two, until the batter is smooth.

    • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.

    • Let the cakes cool completely.


  2. Prepare the Frosting:

  • Whip the chilled heavy cream until stiff peaks form.
  • Gently fold in the mango puree, powdered sugar, and vanilla extract.

  1. Assemble the Cake:

    • Place one cake layer on a serving plate. Spread a layer of mango frosting on top.

    • Add the second cake layer and frost the entire cake with the remaining frosting.

    • Decorate with fresh mango slices and mint leaves.
