Delicious Mango Cake Recipe
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mango puree (from ripe mangoes)
- ½ cup buttermilk (or milk with 1 tsp lemon juice)
For the Mango Frosting:
- 1 cup heavy cream (chilled)
- ½ cup mango puree
- ¼ cup powdered sugar
- 1 tsp vanilla extract
For Garnish:
- Fresh mango slices
- Mint leaves (optional)
Instructions:
Prepare the Mango Puree:
- Peel and chop 2-3 ripe mangoes.
- Blend them into a smooth puree. Set aside.
Make the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
Fold in the mango puree.
Gradually add the dry ingredients and buttermilk, alternating between the two, until the batter is smooth.
Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
Let the cakes cool completely.
Prepare the Frosting:
- Whip the chilled heavy cream until stiff peaks form.
- Gently fold in the mango puree, powdered sugar, and vanilla extract.
Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of mango frosting on top.
Add the second cake layer and frost the entire cake with the remaining frosting.
Decorate with fresh mango slices and mint leaves.
