Healthy Chocolate Cake (Gluten-Free, Refined Sugar-Free)
Ingredients
1 cup (120g) almond flour

½ cup (60g) oat flour (or more almond flour)

½ cup (50g) unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

Pinch of salt

3 large eggs

½ cup (120ml) unsweetened almond milk

⅓ cup (80ml) coconut oil (melted) or olive oil

½ cup (120g) honey or pure maple syrup

2 tsp vanilla extract
Optional: ½ cup (90g) dark chocolate chips (70% cacao or higher)
Instructions

Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

Mix dry ingredients in a large bowl: almond flour, oat flour, cocoa powder, baking powder, baking soda, salt.

Whisk wet ingredients in another bowl: eggs, almond milk, melted coconut oil, honey/maple syrup, vanilla.

Combine wet into dry, stirring until just mixed. Fold in chocolate chips if using.

Pour batter into the pan and smooth the top.

Bake 25–30 minutes, until a toothpick comes out clean or with moist crumbs.

Cool completely before frosting (optional).
Healthy Frosting Option

1 cup (240g) Greek yogurt (full fat)

3 tbsp cocoa powder
-
3–4 tbsp maple syrup or honey
Mix until smooth, spread over cooled cake, and top with dark chocolate shavings.
