- For the biscuit :
- 100 g of dark chocolate
- 2 cl of water
- 5 eggs
- 110 g of almond powder
- 3 tablespoons. tbsp olive oil
- 130 g blond cane sugar
- 1 pinch of salt
- Olive oil (for the mold) FOR THE FILLING: 2 cans of coconut milk with 15% fat
- 2 packets of vanilla sugar 150 g drained cherry brandy
- For the decoration : Chocolate chips.
Method :
- For the biscuit :
- 100 g of dark chocolate
- 2 cl of water
- 5 eggs
- 110 g of almond powder
- 3 tablespoons. tbsp olive oil
- 130 g blond cane sugar
- 1 pinch of salt
- Olive oil (for the mold) FOR THE FILLING: 2 cans of coconut milk with 15% fat
- 2 packets of vanilla sugar 150 g drained cherry brandy
- For the decoration : Chocolate chips.
- The night before, place the coconut milk boxes in the refrigerator, and the next day, melt the chocolate with the water in a double boiler. Set aside.
- Preheat the oven to 180 °C (th. 6), fan heater.
- Break the eggs, separate the whites from the yolks.
- Beat the yolks with the almond powder, olive oil and melted chocolate. Set aside.
- Beat the egg whites in snow with salt, then add the cane sugar little by little while beating. Gently fold the egg whites with a spatula while lifting the chocolate preparation.
- Cover the baking sheet with parchment paper and place the foam ring on it. Oil the inside of the ring and pour in the mixture.
- Bake for 35 to 40 minutes. Take out of the oven and let cool well before unmolding.
- Meanwhile, open the milk boxes of coconut and remove the solid part. Beat with an electric mixer for 1 min, then add the vanilla sugar. Beat for another 5 minutes. Reserve in the fridge.
- Cut the cookie in half horizontally. Spread a little less than half of the coconut cream on the surface of the biscuit, then the cherries . Keep 7 cherries for the decoration.
- Superimpose the other part of the biscuit and spread the coconut cream over the entire surface, including the sides. Decorate with chocolate chips and finish with the reserved cherries.
- Keep in the fridge before serving.
TIP :
Do not throw away the rest of the coconut boxes, prepare with delicious smoothies by mixing with fruits.
