 Swedish  Pear  Almond Cake 


INGREDIENTS

For the pears 
  • 2 sliced pears.
  • 4 tablespoons of butter
  • 6 tablespoons of sugar 
  • 1 vanilla pod cut in half lengthwise
For the cake 
  • 4 oz of soft butter 
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons of milk
  • 1 1/4 flour 
  • 1 teaspoon of baking powder 
  • 1 teaspoon of almond extract

DIRECTIONS


  1. On medium heat, in a large skillet, melt the 2 tablespoons of butter.
  2. Add the pear slices, brown sugar, and vanilla bean and Stir until the sugar is dissolved. Lower the heat to low.
  3. Cook the pears for about 5 minutes or until just soft. Stir often.
  4. When the pears are just soft, put the vanilla in the cake pan, followed by the pear slices, and then the sauce.

  2. Beat the 4 ounces of butter and sugar together.
  3. Add the eggs 1 at a time beating well after each addition.
  4. Add 2 tablespoons of milk and mix.
  5. In a separate large bowl mix the flour and baking powder together.
  6. Fold in the egg mixture and add the almond extract.
  7. Pour the batter over the pears and bake at 400 degrees for 30-35 minutes or until a knife stuck into the center comes out clean.
  8. Cool for about 10 minutes and flip upside down on to serving platter.
  9. Serve with whipped cream and ice cream.
