Ingredients
For the Crust:
- 1 ½ cups (150g) graham cracker crumbs (about 10 full sheets)
- 6 tablespoons (85g) unsalted butter, melted
- ¼ cup (50g) granulated sugar
For the Cheesecake Filling:
- 3 (8-oz each) packages cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 cup (240ml) sour cream, room temperature
- 1 teaspoon vanilla extract
- 3 large eggs, room temperature

- Chocolate ganache
Instructions
1. Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then remove and let cool.
2. Make the Filling:
- In a large mixing bowl, beat the cream cheese and sugar together until smooth.
- Add sour cream and vanilla extract, mixing until combined.
- Add the eggs one at a time, mixing on low speed just until combined. Avoid overmixing to prevent cracks.
3. Assemble and Bake:
- Pour the cheesecake filling over the crust in the springform pan.
- Place the springform pan on a baking sheet to catch any leaks.
- Bake for 70-80 minutes, or until the center is slightly jiggly but not wet.
- Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour.
4. Chill and Serve:
- Cover the cheesecake and refrigerate for at least 6 hours or overnight.
- Remove from the springform pan and top with desired toppings before serving.
