Ingredients

For the Crust:

  • 1 ½ cups (150g) graham cracker crumbs (about 10 full sheets)
  • 6 tablespoons (85g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar

For the Cheesecake Filling:

  • 3 (8-oz each) packages cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature

Optional Toppings:

  • Fresh berries
  • Whipped cream
  • Lemon curd
  • Chocolate ganache

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then remove and let cool.

2. Make the Filling:

  1. In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  2. Add sour cream and vanilla extract, mixing until combined.
  3. Add the eggs one at a time, mixing on low speed just until combined. Avoid overmixing to prevent cracks.

3. Assemble and Bake:

  1. Pour the cheesecake filling over the crust in the springform pan.
  2. Place the springform pan on a baking sheet to catch any leaks.
  3. Bake for 70-80 minutes, or until the center is slightly jiggly but not wet.
  4. Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour.

4. Chill and Serve:

  1. Cover the cheesecake and refrigerate for at least 6 hours or overnight.
  2. Remove from the springform pan and top with desired toppings before serving.
